Hop Cones

The cone is the female flower of the hop plant. This is the only part of the hop plant that really holds an interest for the brewer. The cone conceals a yellow powder called lupulin, which contains both the alpha resins that impart bitterness and the essential oils that provide the aromas.

Hop cones are used in traditional methods of brewing. Cones are added at the beginning of boiling to bring bitterness, and at the end to express aromas, but above all, they are used in dry hopping to add more bouquet to the beer. After harvest, the hops are dried and packed in 60kg (132 lb.) packs. All the hops production in Alsace is stored in refrigerated hall at < 5°C (< 41°F) for a maximum of 15 days after the harvest, in order to preserve all the freshness of the product. The hops are subjected to strict quality controls and humidity analyses. They are ready to be transported for immediate use, or to be re-packed on site. A special opaque, modified atmosphere (MA) packaging is used to preserve the aromatic qualities of the hops and provide the brewers with the quantities that they require.
